Ginger improves the absorption and assimilation of essential nutrients in the body.Its good for digestion purpose also.In my childhood,my mom add ginger to most of the recipes.Now i used it..i also like this ginger flavour.This injipachadi/ginger sauce is one of the vital side dish for all marriages in kerala.


100g Ginger(chopped)
3 teaspoon Corainder powder
1 teaspoon chilli powder
1/2 cup tamarind juice
1 teaspoon mustard seeds
2 teaspoon gingelly oil
Salt to taste


Heat pan and add oil and ginger saute it for 2 minutes.Let it turn into brown color.
Keep it aside.sit it for cool and grind a smooth paste.
Take a pan,heat oil and seasoning with mustard seeds.
Add tamarind juice,chilli powder,corainder powder,fried ginger paste,salt and add a required amount of water.
Let it boil for 15 minutes.Now ginger pachadi is ready.
Serve hot with dal rice and curd rice is perfect.
